Greek Spinach Casserole

There were several reasons why Popeye loved spinach so much! It’s rich in iron, vitamins C and E, potassium, and magnesium. It helps support immune function, may have anticancer properties, and aids the digestive system. However, too much raw spinach might be difficult for some people because of the high fiber content, so cooking it is the answer. There has never been a more delicious way to eat your spinach than this Greek Spinach Casserole. If Popeye had only known!

Total Time: 40 Minutes

Prep Time: 10 Minutes

Cook Time: 30 Minutes

Ingredients:

1 large onion, diced

2 cloves of garlic, minced

1 tablespoon of olive oil

1/2 teaspoon dried oregano

1 pound of spinach, washed and chopped

2 eggs, beaten

1 cup of tomato sauce

1 cup of feta cheese, crumbled

Salt and pepper, to taste

Instructions:

Preheat oven to 350 degrees Fahrenheit.

In a large skillet, heat the olive oil over medium heat. Add the diced onion, minced garlic, oregano, and cook until translucent.

Add the chopped spinach to the skillet and cook until wilted.

Transfer the spinach mixture to a large bowl. Stir in the tomato sauce and feta cheese.

In a small bowl, beat the eggs. Season with salt and pepper to taste.

Pour the beaten eggs over the spinach mixture and stir until everything is well combined.

Transfer the mixture to a baking dish and bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden brown.

Serve the Greek Spinach Casserole for breakfast, lunch, or dinner, or as a side dish, hot with a side of bread or crackers!
