Crazy About Cabbage Soup

Everyone knows that cabbage soup is a dieter’s friend, and during the holidays that’s probably not a bad thing. It’s just, with all the tempting foods this time of year, you need a soup that is truly tasty. Luckily this soup is. You’re going to love this Crazy About Cabbage Soup.

Even if you aren’t trying to lose weight, cabbage soup is both super healthy and super affordable. In addition to aiding in weight loss, cabbage, the star of this show, is high in vitamins C and K, and fiber, while being low in calories.  It is rich in anti-inflammatory and anti-cancer compounds. And the cast of supporting characters also shine when it comes to boosting immunity and providing vitamins. You can’t go wrong!

Ingredients

2 tablespoons extra-virgin olive oil
1 medium onion, chopped
2 medium carrots, chopped
2 stalks celery, chopped
1 medium red bell pepper, chopped
2 cloves garlic, minced
1 ½ teaspoons Italian seasoning
¼  teaspoon salt
½ teaspoon ground pepper
8 cups low-sodium broth of choice 
1 medium cabbage, sliced 
1 14 ounce can diced tomatoes (low-sodium, fire-roasted optional) or 1 large fresh tomato, chopped
2 teaspoons white wine vinegar

Instructions

Over medium heat, place oil in a large pot. Add onion, carrots, and celery, stirring until soft. 

Add bell pepper, garlic, Italian seasoning, salt, and pepper. Continue to stir for 2 minutes.

Add broth, cabbage, and tomato.

Increase heat and bring to a boil. Reduce heat to maintain a simmer.

Cover with a loose lid and cook until all vegetables are tender.

Remove from the heat and stir in the vinegar. 

 

Not trying to lose weight? Try adding some shredded chicken or pasta for a heartier meal.
